Baru Pesto

Pesto can be served with pasta right away, as a condiment on a tasty burger, east with veggies or transferred to a jar or container, covered with a small layer of olive oil, sealed, and refrigerated overnight.
- 1/4 cup Baru nut (shell removed)
- 2-3 cloves of garlic, chopped
- 1/4 cup lemon juice
- 1/4 cup grated Parmesan (or vegan alternative)
- 1/3 cup oil of your choice 
- 1 handful basil
- 2 handfuls arugula 
- salt and pepper to taste
- option - pinch of chilli flakes or chilli oil
- place all ingredients in food processor and pulse until smooth

- condiment for turkey kale burger (pictured here)
- chicken meatballs with low carb pasta alternative (zucchini noodles or lentil pasta)
- roasted veggie (sweet potato, mushroom and onion) and goat cheese over quinoa, drizzled with Baru nut pesto
