Pesto can be served with pasta right away, as a condiment on a tasty burger, east with veggies or transferred to a jar or container, covered with a small layer of olive oil, sealed, and refrigerated overnight.
Ingredients
– 1/4 cup Baru nut (shell removed)
– 2-3 cloves of garlic, chopped
– 1/4 cup lemon juice
– 1/4 cup grated Parmesan (or vegan alternative)
– 1/3 cup oil of your choice
– 1 handful basil
– 2 handfuls arugula
– salt and pepper to taste
– option – pinch of chilli flakes or chilli oil
Instructions 
– place all ingredients in food processor and pulse until smooth
Recommended servings
– condiment for turkey kale burger (pictured here)
– chicken meatballs with low carb pasta alternative (zucchini noodles or lentil pasta)
– roasted veggie (sweet potato, mushroom and onion) and goat cheese over quinoa, drizzled with Baru nut pesto
