Specially for people who are not lactose tolerant.

Ingredients:

  • 1 cup of peeled almonds
  • 1 small garlic clove
  • juice of 1/2 lemon
  • 1 teaspoon nutritional yeast
  • 1 pinch of salt
  • 1 teaspoon unrefined coconut oil
  • 1/4 cup of purified water

Preparation:

First at all, soak for at least 10 hours or a day before so that you can prepare the cheese in the morning and it will be the freshest; do not forget to place them in the refrigerator to avoid damage.

In a blender or food processor, first incorporate the almonds, garlic and yeast to make a kind of flour.

Add all remaining wet ingredients.

Mix until a homogeneous paste is formed and everything is well incorporated.

The result will be a cheese that is not rigid but not liquid in consistency either, cottage cheese style; if you want it to be thicker add a little more water, otherwise add 1/4 cup of almond flour.
