When we saw this recipe from Lauren Aime Wellness it was a perfect way to incorporate Baruvida nuts into a healthy protein packed granola.  You can get this recipe and other tasty healthy recipe by downloading her Feed your Soul Recipes.

 

1 cup of raw oats (gluten free)

1/2 cups vanilla plant based protein powder (Schinoussa)

1/2 cup unsweetened coconut chips or shavings

1/2 cup of raw cashews (roughly chopped)

1/2 cup of Baruvida nuts

1/2 cup of raw almonds or walnuts (roughly chopped)

1/3 cup raw pumpkin seeds

1/2 cup cup unsweetened raisins or cranberries

1/3 cup refined coconut oil (melted)

1/3 cup of rice malt syrup (Lundburg Sweet Dreams)

1/4 tsp Himalayan seas salt

1 tsp cinnamon

 

 

 

 

 

Directions

Preheat oven to 350 degrees.

Toss all ingredients into a large bowl.  Mix together until everything is combined and completely coated in coconut il and rice syrup.

Spread granola mix onto parchment paper lined baking sheet.  Bake for 10 minutes, remove from oven and break up and toss about with spatula.  Put baking tray back in the oven for another 5 minutes.

Remove and let cool before breaking up into granola.  Store in fridge for up to 2 weeks, if it last that long!
